Cinnamon Roll Pancakes
Description:
These delicious pancakes are a true indulgence, they combine my originally pancake recipe with the delicious filing you find in a cinnamon roll. These are perfect for any special occasion or on a lazy Sunday when you want something delicious.
Recipe
Ingredients:
Pancakes:
2 cups all purpose flour
1/4 cup sugar
1 tbsp baking powder
2 tsp baking soda
1 tsp kosher salt
2 cups milk mixed with 2tbsp lemon
1/2 cup vegetable oil
2 large eggs
Cinnamon swirl:
5 tbsp unsalted butter melted
2/3 cup lightly packed brown sugar
1 tbsp ground cinnamon
Cream cheese drizzle:
1/2 block of cream cheese room temp (I usually get the Philadelphia cream cheese blocks)
1/2 juice of a lemon (or may need more depending on how juicy your lemon is)
3/4 cup powder sugar
1 tsp vanilla
Directions:
Make the cinnamon swirl filling by melting the butter, add in the brown sugar and cinnamon stir and place in a plastic bag and set aside (you will ultimately cut a small hole in the corner to pipe the filling onto your pancake)
Make the cream cheese drizzle
- Start by beating the cream cheese on medium – high
- Add the lemon juice continue mixing
- Add the powdered sugar in small amounts so it doesn’t fly all over your kitchen.
- Add the vanilla
Continue mixing until smooth.
Make the pancake batter
- In a large bowl whisk together the flour sugar baking powder baking soda and salt. Set aside
- In a medium bowl whisk together the milk and lemon mixture, oil and eggs
- Pour the liquid into the dry ingredients and stir together until well combined. Let stand for 20-30 minutes (you’ll notice the batter get fluffy)
- Heat a skillet with unsalted butter, pour 1/4 cup of the batter onto the skillet. Take your cinnamon swirl filling that you’ve cut a hole in and pipe it immediately onto the pancake. You’ll notice the filling will sink a tiny bit into the pancake which is fine and is what you want. Wait until the pancake bubbles before flipping it. Continue to make all of your pancakes. Wipe the skillet after each set (the sugar can make the surface sticky and can burn).
Drizzle with maple syrup or cream cheese frosting.
